An award winning boutique bakery, Cocoa & Fig is owned by husband and wife team Joe and Laurie Lin. For over 10 years this duo has sweetened events both large and small with their delectable treats and signature tablescape styling. All of our sweets are made from scratch in small batches to guarantee that everything tastes just as good as it looks.
Laurie serves as executive pastry chef and mastermind behind our family of businesses. From a young age, Laurie had a love for cooking and baking that was first inspired by her mother. A graduate of Tufts University, she began her career as a preschool teacher before returning to school to study culinary arts. She attended the Culinary Institute of America and completed an internship under Sara Foster of Fosters Markets in Durham and Chapel Hill, NC. It was with Sara that Laurie attained her philosophy on cooking: let the food speak for itself by using fresh, local, and seasonal ingredients.
Laurie later moved to California to pursue her love of pastry at the CIA's Napa Valley campus. During this time she also worked as a pastry chef for Thomas Keller in his Bouchon Bakery. It was here that she decided to one day open her own company using her combined skills in cooking, baking and party planning.
Joe serves as financial guru and class clown in our family of businesses. Good food and family have always been an integral part of Joe's life. Raised in a Chinese American family of 15, every meal was an event in the Lin household. His love of food started at an early age when he would help his father, a former restaurant owner, prepare the family dinners. He continues to have a deep appreciation for cuisines from around the world, and enjoys seeing the excitement food & pastries bring to people's lives.
In January of 2019, Joe & Laurie purchased a family run bakery in the heart of downtown Prior Lake (Laurie's hometown). Known for its breakfast pastries, including croissants, danish, and donuts, this popular spot also offers breakfast, lunch and desserts. We hope you'll stop by sometime and say hello!
Skillet Joe's Food Truck
In 2013, Joe & Laurie purchased a step van, converted it to a mobile kitchen, and Skillet Joe's was born! An extension of our farmers market presence, we have been serving up hot breakfast to the patrons of the Prior Lake Farmers Market every market season since 2009. The Crab Cakes Benedict and Huevos Rancheros are not to be missed!
